Almond and Coconut Crackle Cookies are a delicious, keto-friendly treat that are easy to make and perfect for those on a low-carb diet. They are made with simple, wholesome ingredients and are naturally sweetened with erythritol, a sugar substitute that doesn't spike blood sugar levels.

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the almond flour, coconut flour, erythritol, shredded coconut, baking soda, and salt.
  3. In a separate bowl, mix together the almond butter, melted coconut oil, egg, and vanilla extract until smooth.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until a dough forms.
  5. Using a cookie scoop or your hands, form the dough into balls and place them on the prepared baking sheet. Flatten each ball slightly with the bottom of a glass.
  6. Bake for 10-12 minutes, or until the edges are golden brown. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
