This is a delicious and healthy keto friendly recipe for Asparagus Fries with Red Pepper Aioli. It's a great alternative to traditional fries and is packed with nutrients.
Ingredients[edit | edit source]
- 1 bunch of asparagus
- 1 cup of almond flour
- 2 eggs
- 1 cup of parmesan cheese, grated
- Salt and pepper to taste
- 1 red bell pepper
- 1/2 cup of mayonnaise
- 1 clove of garlic, minced
- 1 tablespoon of lemon juice
Instructions[edit | edit source]
- Preheat your oven to 425 degrees F (220 degrees C).
- Trim the ends of the asparagus and set aside.
- In a shallow dish, mix the almond flour, parmesan cheese, salt, and pepper.
- In another dish, beat the eggs.
- Dip each asparagus spear into the egg, then roll in the almond flour mixture.
- Place the coated asparagus on a baking sheet and bake for 15-20 minutes, or until golden brown.
- While the asparagus is baking, make the aioli. Roast the red bell pepper, then remove the skin and seeds.
- In a blender, combine the roasted red pepper, mayonnaise, garlic, and lemon juice. Blend until smooth.
- Serve the asparagus fries with the red pepper aioli on the side.
