This is a delicious and healthy keto friendly recipe for Asparagus Fries with Red Pepper Aioli. It's a great alternative to traditional fries and is packed with nutrients.

  1. Preheat your oven to 425 degrees F (220 degrees C).
  2. Trim the ends of the asparagus and set aside.
  3. In a shallow dish, mix the almond flour, parmesan cheese, salt, and pepper.
  4. In another dish, beat the eggs.
  5. Dip each asparagus spear into the egg, then roll in the almond flour mixture.
  6. Place the coated asparagus on a baking sheet and bake for 15-20 minutes, or until golden brown.
  7. While the asparagus is baking, make the aioli. Roast the red bell pepper, then remove the skin and seeds.
  8. In a blender, combine the roasted red pepper, mayonnaise, garlic, and lemon juice. Blend until smooth.
  9. Serve the asparagus fries with the red pepper aioli on the side.
