Bill's is a popular restaurant chain based in the United Kingdom. The chain was founded by Bill Collison in 2000 and has since expanded to over 80 locations across the country. Known for its relaxed, friendly atmosphere and diverse menu, Bill's has become a staple in the UK dining scene.

Bill's was founded by Bill Collison in 2000 in Lewes, East Sussex. The original location was a small greengrocer's shop, which Collison transformed into a cafe after it was damaged in a flood. The cafe quickly gained popularity for its fresh, locally sourced food and friendly service.

In 2008, the brand was acquired by the Richard Caring-led Caprice Holdings, which helped to expand the chain across the UK. Today, there are over 80 Bill's restaurants in various cities and towns, including London, Manchester, Birmingham, and Edinburgh.
