- 4 medium zucchini
- 2 cups chicken, cooked and shredded
- 1 cup broccoli, chopped
- 1/2 cup bell pepper, diced
- 1/2 cup onion, diced
- 2 cloves garlic, minced
- 1 cup cheddar cheese, shredded
- Salt and pepper to taste
- Olive oil for drizzling

- Preheat your oven to 400 degrees F (200 degrees C).
- Cut the zucchinis in half lengthwise and scoop out the seeds to create a boat.
- Place the zucchini boats on a baking sheet and drizzle with olive oil.
- In a large pan, sauté the onion, bell pepper, and garlic until tender.
- Add the cooked chicken and chopped broccoli to the pan and stir to combine.
- Season the mixture with salt and pepper to taste.
- Spoon the mixture into the zucchini boats and top with shredded cheddar cheese.
- Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
