Charred Veggie and Fried Goat Cheese Salad[edit | edit source]

This is a delicious and nutritious keto friendly recipe for Charred Veggie and Fried Goat Cheese Salad. It's a perfect meal for those who are following a low-carb diet or just want to enjoy a healthy and tasty salad.

  1. Start by washing and drying all the vegetables. Cut the vegetables you chose to char into bite-sized pieces.
  2. Heat a pan over medium heat, add a tablespoon of olive oil. Once the oil is hot, add the vegetables and cook until they are charred to your liking. Season with salt and pepper.
  3. While the vegetables are cooking, prepare the goat cheese. Beat the egg in one bowl and place the almond flour in another. Slice the goat cheese into rounds, dip each round into the egg, then coat with almond flour.
  4. In a separate pan, heat a bit of olive oil over medium heat. Once hot, add the goat cheese rounds and cook until golden brown on each side.
  5. To assemble the salad, place the mixed greens in a large bowl, top with the charred vegetables and fried goat cheese. Drizzle with your favorite vinaigrette.
