Cheesy Cauliflower Bacon Soup[edit | edit source]

This is a delicious and hearty keto friendly soup that is perfect for a cold day. It is packed with healthy ingredients and is sure to satisfy your taste buds.

  1. In a large pot, cook the bacon until crispy. Remove the bacon and set aside, leaving the bacon grease in the pot.
  2. Add the diced onion to the pot and cook until translucent.
  3. Add the minced garlic and cook for another minute.
  4. Add the cauliflower florets to the pot and stir to coat in the bacon grease.
  5. Pour in the chicken broth and bring to a boil.
  6. Reduce heat and simmer until the cauliflower is tender.
  7. Use an immersion blender to puree the soup until smooth.
  8. Stir in the heavy cream and shredded cheddar cheese until the cheese is melted.
  9. Season with salt and pepper to taste.
  10. Serve the soup hot, garnished with the crumbled bacon and chives.
