Cheesy Cauliflower Bacon Soup[edit | edit source]
This is a delicious and hearty keto friendly soup that is perfect for a cold day. It is packed with healthy ingredients and is sure to satisfy your taste buds.
Ingredients[edit | edit source]
- 1 large head of cauliflower, cut into florets
- 4 cups of chicken broth
- 1 cup of heavy cream
- 2 cups of shredded cheddar cheese
- 6 slices of bacon, cooked and crumbled
- 1 onion, diced
- 2 cloves of garlic, minced
- Salt and pepper to taste
- Chives for garnish
Instructions[edit | edit source]
- In a large pot, cook the bacon until crispy. Remove the bacon and set aside, leaving the bacon grease in the pot.
- Add the diced onion to the pot and cook until translucent.
- Add the minced garlic and cook for another minute.
- Add the cauliflower florets to the pot and stir to coat in the bacon grease.
- Pour in the chicken broth and bring to a boil.
- Reduce heat and simmer until the cauliflower is tender.
- Use an immersion blender to puree the soup until smooth.
- Stir in the heavy cream and shredded cheddar cheese until the cheese is melted.
- Season with salt and pepper to taste.
- Serve the soup hot, garnished with the crumbled bacon and chives.
