Coconut Raspberry Slice is a delicious, keto-friendly dessert that combines the tropical flavor of coconut with the tart sweetness of raspberries. This recipe is easy to make and perfect for those following a keto diet.
Ingredients[edit | edit source]
- 1 cup of Almond flour
- 1/2 cup of Coconut flour
- 1/2 cup of Erythritol
- 1/2 cup of melted Coconut oil
- 1 cup of fresh Raspberries
- 1/2 cup of shredded Coconut
- 2 Eggs
- 1 teaspoon of Vanilla extract
Instructions[edit | edit source]
- Preheat your oven to 180°C (350°F) and line a baking tray with parchment paper.
- In a large bowl, combine the almond flour, coconut flour, and erythritol.
- Add the melted coconut oil, eggs, and vanilla extract to the dry ingredients and mix until well combined.
- Press the mixture into the bottom of the prepared baking tray.
- Scatter the raspberries and shredded coconut over the top of the mixture.
- Bake for 25-30 minutes, or until the edges are golden brown.
- Allow to cool completely before slicing and serving.
