Keto Hearty Pot Pie offers a comforting and filling meal, reminiscent of traditional pot pies, but with a keto-friendly twist. The pie uses a low-carb crust and a creamy filling packed with meats and veggies to satisfy the most fervent cravings without the excess carbohydrates.
Keto Hearty Pot Pie Recipe[edit | edit source]
Ingredients[edit | edit source]
- 2 cups cooked chicken, diced
- 1 cup mixed vegetables (like cauliflower, green beans, bell pepper)
- 1 cup heavy cream
- 1/4 cup chicken broth
- 1 keto-friendly pie crust (store-bought or homemade keto pie crust)
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper, to taste
- 1 egg (for egg wash)
Preparation[edit | edit source]
- Preheat the oven to 375°F (190°C).
- In a large skillet, sauté the diced chicken and vegetables over medium heat until the vegetables are tender.
- Add the heavy cream, chicken broth, garlic powder, and onion powder. Stir well and simmer for 5 minutes until the mixture thickens.
- Season with salt and pepper to taste.
- Pour the chicken and vegetable mixture into a pie dish.
- Roll out the keto pie crust and place it over the filling, trimming any excess.
- Brush the pie crust with a beaten egg to give it a golden finish when baked.
- Bake in the preheated oven for 25-30 minutes or until the crust is golden brown.
- Let it cool for a few minutes before serving.
