Keto Egg Salad
Keto Avocado Egg Salad is a creamy, filling, and low-carb salad perfect for a light lunch or snack. The avocado provides healthy fats, while the eggs offer a good source of protein, making this salad not only tasty but also nutritious.

- 4 hard-boiled eggs, peeled and chopped
- 2 ripe avocados, peeled, pitted, and mashed
- 2 tbsp mayonnaise, preferably full-fat
- 1 tsp Dijon mustard
- 1 tbsp fresh lemon juice or lime juice
- Salt and pepper to taste
- 2 tbsp chopped fresh parsley or cilantro
- 1/4 cup diced red onion
- Optional: 1/4 cup diced celery for crunch

- In a mixing bowl, combine the mashed avocados, mayonnaise, Dijon mustard, and lemon or lime juice. Mix until smooth.
- Gently fold in the chopped eggs, red onion, and celery (if using).
- Season with salt and pepper to taste.
- Garnish with chopped parsley or cilantro before serving.
