Limes are a citrus fruit, which are typically round, green in color, 3–6 cm in diameter, and contain acidic juice vesicles. There are several species of citrus trees whose fruits are called limes, including the Key lime (Citrus aurantiifolia), Persian lime (Citrus × latifolia), Kaffir lime (Citrus hystrix), and Desert lime (Citrus glauca). Limes are an excellent source of vitamin C, and are often used to accent the flavors of foods and beverages. They are grown year-round and are usually smaller and less sour than lemons.

The origin of limes is believed to be in Southeast Asia and they were first grown in large scale in Persia and southern Iraq. From there, they spread to the Mediterranean region and eventually to the Americas, where they were introduced by European explorers in the 16th century. The Key lime gained popularity in the United States in the late 19th century, particularly in the Florida Keys, where it became famous in the Key lime pie.

Cultivation[edit | edit source]

Lime trees flourish in warm climates and are extensively cultivated in tropical and subtropical regions worldwide. They require well-drained soil and adequate sunlight. The trees can be propagated from seed but are more commonly grafted to ensure fruit quality and disease resistance. Limes are harvested by hand and are available throughout the year, although their peak season is in the summer months.

Limes are widely used in cuisine for their juice and zest, which add a tangy flavor to various dishes and beverages. They are a key ingredient in Mexican, Indian, Latin American, and Southeast Asian cuisines. Lime juice is an essential component of cocktails such as the Mojito and Margarita.
