Ruby Tuesday is an American multinational foodservice retailer that owns, operates, and franchises Ruby Tuesday restaurants. The concept was started in 1972 by Samuel E. Beall III.

The first Ruby Tuesday was opened in 1972 by Samuel E. Beall III, near the University of Tennessee at Knoxville campus. The location was chosen because of the heavy student traffic. The name "Ruby Tuesday" was suggested by an associate of Beall, after the Rolling Stones song of the same name.

Ruby Tuesday is known for its American cuisine, including all-natural chicken, pasta, pork ribs, soups, steak, and seafood. They also have a variety of burgers made from USDA Prime beef. The menu is complemented by a notable salad bar and cocktail menu.
