Ingredients:
- 1 cup mixed vegetables (carrots, beans, potato, drumstick, yam, plantains, etc.)
- 1 cup grated coconut
- 1 green chili
- 1/2 tsp cumin powder
- 1/4 tsp turmeric powder
- Salt to taste
- 2 tbsp coconut oil
- 2 tbsp fresh cilantro, chopped
Instructions:
- Cut the vegetables into bite-sized pieces and keep them ready.
- Grind the grated coconut, green chili, cumin powder, turmeric powder, and salt to a fine paste.
- In a pan, heat the coconut oil and add the vegetables. Fry for a few minutes.
- Add the ground paste and mix well.
- Add 1 cup of water and bring the curry to a boil.
- Reduce the heat to low, cover the pan and let the curry simmer for 15-20 minutes or until the vegetables are cooked through.
- Garnish with fresh cilantro and serve hot.
