Eau de vie
Eau de vie (French for "water of life") is a clear, colorless fruit brandy that is produced by means of fermentation and double distillation. The fruit flavor is typically very light.
Production[edit | edit source]
In the production of eau de vie, the fruit is fermented (usually crushed), and the resulting fermented mash is distilled twice. The resulting alcohol is about 40% to 45% in volume (80 to 90 proof). This process is similar to the production of most other kinds of brandy, but the base ingredient is fruit rather than grapes.
Types[edit | edit source]
Different types of eau de vie are made from different fruits. For example, poire William is made from pears, kirsch from cherries, framboise from raspberries, and mirabelle from mirabelle plums.
Uses[edit | edit source]
Eau de vie is typically served as a digestif, and is often used in cooking as a flavoring agent. It is also used in some cocktails.
