Braised Pork Belly Noodles is a delicious and satisfying dish that is perfect for those following a keto diet. This recipe is low in carbs and high in fat, making it a great choice for those trying to maintain a state of ketosis.
Ingredients[edit | edit source]
- 1 lb pork belly, cut into 1-inch cubes
- 2 tbsp coconut oil
- 1 cup bone broth
- 2 cloves garlic, minced
- 1 onion, chopped
- 1 tbsp soy sauce (or tamari for gluten-free)
- 1 tbsp ginger, grated
- 1 tsp chili flakes (optional)
- 4 zucchini, spiralized into noodles
- Salt and pepper to taste
Instructions[edit | edit source]
- Heat the coconut oil in a large pan over medium heat. Add the pork belly and cook until browned on all sides. Remove from the pan and set aside.
- In the same pan, add the onion and garlic and cook until softened.
- Add the ginger, chili flakes, and soy sauce to the pan and stir to combine.
- Return the pork belly to the pan and add the bone broth. Bring to a simmer and cover. Cook for about 2 hours, or until the pork is tender.
- While the pork is cooking, prepare the zucchini noodles. Use a spiralizer to turn the zucchini into noodles.
- Once the pork is done, add the zucchini noodles to the pan and cook for 2-3 minutes, or until the noodles are tender.
- Season with salt and pepper to taste. Serve hot.
