Caramel Crème Brûlée is a delicious, creamy dessert that is perfect for those following a keto diet. This recipe is easy to make and is sure to satisfy your sweet tooth.

  1. Preheat your oven to 325°F (165°C).
  2. In a medium saucepan, combine the heavy cream, erythritol, and vanilla extract. Heat over medium heat until it begins to simmer.
  3. In a separate bowl, whisk the egg yolks until they become slightly frothy.
  4. Slowly pour the heated cream mixture into the egg yolks, whisking constantly to prevent the eggs from cooking.
  5. Stir in the sugar-free caramel syrup.
  6. Pour the mixture into four ramekins and place them in a baking dish. Fill the dish with boiling water until it reaches halfway up the sides of the ramekins.
  7. Bake for 40-45 minutes, or until the centers are set.
  8. Remove from the oven and let cool. Once cooled, refrigerate for at least 2 hours.
  9. Before serving, sprinkle each ramekin with the remaining erythritol and use a torch to caramelize the top. If you don't have a torch, you can also broil the ramekins in the oven for a few minutes until the tops are golden.
