Antoine-Augustin Parmentier (12 August 1737 – 13 December 1813) was a French agronomist who is best remembered for his advocacy of the potato as a food source for humans in France and throughout Europe. His efforts led to the acceptance of the potato as a staple in the European diet, which had a significant impact on the history of agricultural development in the continent.

Born in Montdidier, France, Parmentier was educated as a pharmacist in the French army. During the Seven Years' War, he was captured by the Prussians and discovered the nutritional value of potatoes while in prison, as they were commonly fed to prisoners.

After his return to France, Parmentier began promoting the potato as a food source. At the time, the French populace was highly suspicious of the potato, believing it to be poisonous and a cause of leprosy among other diseases. Through a series of experiments and public demonstrations, Parmentier worked to change public opinion.

One of his most famous stunts involved hosting a banquet where all the dishes were made of potatoes. He also planted a field of potatoes guarded by armed soldiers to suggest valuable crops were growing there, only to order the guards to accept any theft, which helped to popularize the vegetable among the masses.

Parmentier's work led to the widespread acceptance of the potato in France, which contributed to nutritional health and agricultural stability. This was particularly significant as it came at a time when France was facing severe food shortages. Today, Parmentier is remembered for his contributions to improving food security and nutrition. Various dishes bearing his name, such as Hachis Parmentier, pay homage to his efforts. Antoine-Augustin Parmentier died on 13 December 1813 in Paris, France. His legacy continues to influence culinary and agricultural practices worldwide.
