Bacon Roasted Chicken with Pan Gravy[edit | edit source]
Ingredients[edit | edit source]
- Bacon - 6 slices
- Chicken - 1 whole (about 4 pounds)
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Garlic - 3 cloves, minced
- Onion - 1, chopped
- Chicken broth - 1 cup
- Heavy cream - 1/2 cup
Instructions[edit | edit source]
- Preheat your oven to 375 degrees F (190 degrees C).
- Lay the bacon slices over the chicken, tucking them underneath to secure them.
- Season the chicken with salt and pepper, then sprinkle the minced garlic over it.
- Place the chopped onion in the bottom of a roasting pan, then place the chicken on top.
- Roast the chicken in the preheated oven for about 1 hour and 30 minutes, or until the juices run clear.
- Remove the chicken from the oven and let it rest for 10 minutes.
- While the chicken is resting, pour the chicken broth into the roasting pan and scrape up any browned bits from the bottom.
- Pour the broth into a saucepan and bring it to a boil over high heat.
- Reduce the heat to medium and stir in the heavy cream.
- Simmer the gravy until it thickens, about 10 minutes.
- Carve the chicken and serve it with the pan gravy.
