Bolognese Zoodle Bake[edit | edit source]
A delicious and hearty keto friendly dish, the Bolognese Zoodle Bake is a perfect meal for those following a low-carb diet. This recipe uses zucchini noodles, also known as "zoodles", in place of traditional pasta to keep the carb count low.
Ingredients[edit | edit source]
- 4 large zucchini, spiralized
- 1 lb ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 1/4 cup fresh basil, chopped
- 1/4 cup fresh parsley, chopped
- 1 cup mozzarella cheese, shredded
- Salt and pepper to taste
- Olive oil for cooking
Instructions[edit | edit source]
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat the olive oil over medium heat. Add the onion and garlic and sauté until the onion is translucent.
- Add the ground beef to the skillet and cook until browned. Drain any excess fat.
- Stir in the crushed tomatoes, basil, and parsley. Season with salt and pepper. Simmer for 15-20 minutes.
- While the sauce is simmering, prepare the zoodles. Using a spiralizer, turn the zucchinis into noodles.
- In a baking dish, layer the zoodles, then the Bolognese sauce, and finally the shredded mozzarella cheese.
- Bake for 20-25 minutes, or until the cheese is bubbly and golden.
- Let the dish cool for a few minutes before serving.
