Buffalo Chicken Meatloaf Cupcakes are a delicious and keto-friendly meal that is easy to prepare and packed with flavor. This recipe serves 6.
Ingredients[edit | edit source]
- 1 lb Ground Chicken
- 1/2 cup Almond Flour
- 1/2 cup Buffalo Sauce
- 1/2 cup Celery, finely chopped
- 1/2 cup Onion, finely chopped
- 1 Egg
- 1 tsp Garlic Powder
- 1 tsp Onion Powder
- Salt and Pepper to taste
- 1/2 cup Blue Cheese, crumbled
Instructions[edit | edit source]
- Preheat your oven to 375 degrees F (190 degrees C).
- In a large bowl, combine the ground chicken, almond flour, buffalo sauce, celery, onion, egg, garlic powder, onion powder, salt, and pepper. Mix until well combined.
- Divide the mixture evenly among the cups of a muffin tin, pressing down to ensure they are packed tightly.
- Bake in the preheated oven for 25-30 minutes, or until the meatloaf cupcakes are cooked through and no longer pink in the middle.
- Remove from the oven and sprinkle each meatloaf cupcake with crumbled blue cheese.
- Return to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.
- Allow to cool for a few minutes before serving.
