A Cast Iron Kitchen Sink Frittata is a versatile and delicious keto friendly dish that can be enjoyed at any time of the day. This recipe is designed to be cooked in a cast iron skillet, which gives the frittata a unique and flavorful crust.
Ingredients[edit | edit source]
- 8 eggs
- 1/2 cup heavy cream
- 1 cup shredded cheddar cheese
- 1/2 cup chopped bell peppers
- 1/2 cup chopped onions
- 1/2 cup chopped mushrooms
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions[edit | edit source]
- Preheat your oven to 375 degrees Fahrenheit.
- In a large bowl, whisk together the eggs, heavy cream, half of the cheddar cheese, salt, and pepper.
- Heat the olive oil in a cast iron skillet over medium heat.
- Add the bell peppers, onions, mushrooms, and garlic to the skillet and sauté until they are soft and slightly browned.
- Pour the egg mixture over the vegetables in the skillet.
- Sprinkle the remaining cheddar cheese on top of the egg mixture.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the frittata is set and the cheese is golden brown.
- Let the frittata cool for a few minutes before slicing and serving.
