This is a delicious and hearty keto friendly recipe for Chicken Cordon Bleu and Kale Soup. It's perfect for those on a low-carb diet and is packed with protein and healthy fats.

  1. Preheat your oven to 375 degrees F (190 degrees C).
  2. Lay the chicken breasts flat and season both sides with salt and pepper.
  3. Place a slice of ham and a slice of Swiss cheese on each chicken breast.
  4. Roll up the chicken breasts and secure with toothpicks.
  5. Heat the olive oil in a skillet over medium heat. Add the chicken rolls and cook until browned on all sides.
  6. Transfer the chicken to a baking dish and bake for 20 minutes, or until the chicken is cooked through.
  7. While the chicken is baking, bring the chicken broth to a boil in a large pot.
  8. Add the kale and cook until wilted.
  9. Stir in the heavy cream and season with salt and pepper.
  10. Slice the baked chicken and serve with the kale soup.
