Chicken Cordon Bleu and Kale Soup[edit | edit source]
This is a delicious and hearty keto friendly recipe for Chicken Cordon Bleu and Kale Soup. It's perfect for those on a low-carb diet and is packed with protein and healthy fats.
Ingredients[edit | edit source]
- 2 chicken breasts, boneless and skinless
- 4 slices of ham
- 4 slices of Swiss cheese
- 1 tablespoon of olive oil
- 1/2 cup of chicken broth
- 1/2 cup of heavy cream
- 2 cups of chopped kale
- Salt and pepper to taste
Instructions[edit | edit source]
- Preheat your oven to 375 degrees F (190 degrees C).
- Lay the chicken breasts flat and season both sides with salt and pepper.
- Place a slice of ham and a slice of Swiss cheese on each chicken breast.
- Roll up the chicken breasts and secure with toothpicks.
- Heat the olive oil in a skillet over medium heat. Add the chicken rolls and cook until browned on all sides.
- Transfer the chicken to a baking dish and bake for 20 minutes, or until the chicken is cooked through.
- While the chicken is baking, bring the chicken broth to a boil in a large pot.
- Add the kale and cook until wilted.
- Stir in the heavy cream and season with salt and pepper.
- Slice the baked chicken and serve with the kale soup.
