Chicken Inasal: Filipino Chicken BBQ (Keto-Friendly)[edit | edit source]

Chicken Inasal is a popular Filipino dish that is perfect for a keto diet. This recipe is packed with flavors from lemongrass, vinegar, and other spices, and it's grilled to perfection for a satisfying meal.

  1. Combine the lemongrass, garlic, vinegar, soy sauce, brown sugar substitute, salt, black pepper, and lime or calamansi juice in a bowl. Mix well.
  2. Add the chicken pieces to the marinade. Make sure all pieces are well coated. Cover the bowl and refrigerate for at least 3 hours, or overnight for best results.
  3. Preheat your grill to medium heat.
  4. Thread the chicken pieces onto the soaked bamboo skewers.
  5. Grill the chicken, turning occasionally and basting with the leftover marinade, for about 20-30 minutes, or until the chicken is cooked through and the skin is nicely charred.
  6. Serve hot with a side of Cauliflower Rice for a complete keto meal.
