Chicken vindaloo
Chicken Vindaloo Recipe[edit | edit source]
Ingredients:
- 1 lb boneless chicken breasts, cut into bite-sized pieces
- 2 tbsp oil
- 1 tsp cumin seeds
- 2 tbsp ginger-garlic paste
- 1 onion, finely chopped
- 2 tomatoes, pureed
- 2 tsp red chili powder
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1/4 tsp turmeric powder
- 1 tsp garam masala powder
- Salt to taste
- 2 tbsp tomato paste
- 1 cup water
- 2 tbsp chopped cilantro for garnish
Instructions:
- In a pan, heat oil and add cumin seeds. Once they start to sizzle, add ginger-garlic paste and sauté until fragrant.
- Add the chopped onion and sauté until translucent.
- Add the pureed tomatoes, red chili powder, cumin powder, coriander powder, turmeric powder, garam masala powder, and salt. Cook until the oil starts to separate from the masala.
- Add the chicken pieces, tomato paste, and water. Stir to mix well.
- Bring to a boil, then reduce the heat to low and let it simmer for 20-25 minutes or until the chicken is cooked through and the sauce is thick.
- Garnish with cilantro and serve with rice or cauliflower rice.
