Chocolate Curry Cupcakes are a unique fusion of flavors that are perfect for those following a keto diet. The rich, dark chocolate pairs beautifully with the warm, aromatic curry to create a dessert that is both indulgent and satisfying.
Ingredients[edit | edit source]
- 1 cup of almond flour
- 1/2 cup of cocoa powder
- 1/2 cup of erythritol
- 1 teaspoon of baking powder
- 1/2 teaspoon of salt
- 1 tablespoon of curry powder
- 3 large eggs
- 1/2 cup of coconut oil
- 1/2 cup of almond milk
- 1 teaspoon of vanilla extract
Instructions[edit | edit source]
- Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a large bowl, combine the almond flour, cocoa powder, erythritol, baking powder, salt, and curry powder.
- In a separate bowl, whisk together the eggs, coconut oil, almond milk, and vanilla extract.
- Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
- Divide the batter evenly among the cupcake liners.
- Bake for 20-25 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.
- Allow the cupcakes to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
