Chocolate Curry Cupcakes are a unique fusion of flavors that are perfect for those following a keto diet. The rich, dark chocolate pairs beautifully with the warm, aromatic curry to create a dessert that is both indulgent and satisfying.

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, combine the almond flour, cocoa powder, erythritol, baking powder, salt, and curry powder.
  3. In a separate bowl, whisk together the eggs, coconut oil, almond milk, and vanilla extract.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
  5. Divide the batter evenly among the cupcake liners.
  6. Bake for 20-25 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.
  7. Allow the cupcakes to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
