A delicious and healthy treat, these Cinnamon Blondie Pecan Bars are perfect for those following a keto diet. They are low in carbs, high in healthy fats, and packed with flavor.
Ingredients[edit | edit source]
- 1 cup almond flour
- 1/4 cup coconut flour
- 1/2 cup erythritol
- 1/2 cup butter, melted
- 1/2 cup pecans, chopped
- 2 eggs
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1/2 tsp baking powder
- 1/4 tsp salt
Instructions[edit | edit source]
- Preheat your oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper.
- In a large bowl, combine the almond flour, coconut flour, erythritol, cinnamon, baking powder, and salt.
- In a separate bowl, whisk together the melted butter, eggs, and vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, mixing until well combined.
- Fold in the chopped pecans.
- Pour the batter into the prepared baking pan and smooth the top with a spatula.
- Bake for 20-25 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean.
- Allow the bars to cool completely in the pan before cutting into squares.
