Cinnamon Roll Pudding Pops are a delicious and keto-friendly dessert that can be enjoyed any time of the year. They are easy to make and are a great way to satisfy your sweet tooth while sticking to your keto diet.
Ingredients[edit | edit source]
- 1 cup of Almond Milk
- 1/2 cup of Heavy Cream
- 1/4 cup of Erythritol
- 1 tsp of Vanilla Extract
- 1 tsp of Cinnamon
- 1/2 tsp of Xanthan Gum
- 4 Cinnamon Sticks (for the popsicle sticks)
Instructions[edit | edit source]
- In a medium saucepan, combine the almond milk, heavy cream, erythritol, vanilla extract, and cinnamon.
- Bring the mixture to a simmer over medium heat, stirring constantly.
- Once the mixture is simmering, slowly whisk in the xanthan gum. Continue to whisk until the mixture thickens to a pudding-like consistency.
- Remove the saucepan from the heat and let the mixture cool to room temperature.
- Once cooled, pour the mixture into popsicle molds, inserting a cinnamon stick into each one to act as the popsicle stick.
- Freeze the popsicles for at least 4 hours, or until they are completely frozen.
- To serve, run the popsicle mold under warm water for a few seconds to loosen the popsicles, then gently pull them out by the cinnamon stick.
