Coconut Cream Yogurt is a delicious and nutritious keto-friendly recipe that is easy to prepare and perfect for those on a ketogenic diet. It is rich in healthy fats and probiotics, making it an excellent choice for gut health.
Ingredients[edit | edit source]
- 2 cans of full-fat coconut milk
- 2 tablespoons of gelatin
- 2 tablespoons of honey (optional)
- 2 probiotic capsules
- 1 tablespoon of vanilla extract (optional)
Instructions[edit | edit source]
- Warm the coconut milk in a saucepan over medium heat until it reaches a temperature of about 110 degrees Fahrenheit.
- Sprinkle the gelatin over the warm coconut milk and stir until it is completely dissolved.
- Remove the saucepan from the heat and let it cool to room temperature.
- Once the coconut milk is cool, stir in the honey and vanilla extract, if using.
- Open the probiotic capsules and sprinkle the contents over the coconut milk mixture. Stir well to combine.
- Pour the mixture into a clean glass jar and cover it with a cloth. Let it sit at room temperature for 24 to 48 hours, until it thickens to a yogurt-like consistency.
- Once the yogurt has thickened, refrigerate it for at least 6 hours before serving.
