Creamy Crab Zucchini Casserole[edit | edit source]

A delicious and nutritious keto friendly dish, the Creamy Crab Zucchini Casserole is a perfect meal for those following a low-carb diet.

  1. Preheat your oven to 375 degrees Fahrenheit.
  2. Slice the zucchini into thin rounds and set aside.
  3. In a large skillet, heat the olive oil over medium heat. Add the onion and garlic and sauté until they become translucent.
  4. Add the crab meat to the skillet and cook until it's heated through.
  5. In a separate bowl, combine the heavy cream, cheddar cheese, and half of the Parmesan cheese. Stir until well combined.
  6. Add the cooked crab meat and onions to the cream and cheese mixture. Stir until everything is well coated.
  7. Layer the bottom of a casserole dish with the sliced zucchini. Pour the crab and cream mixture over the zucchini. Top with the remaining Parmesan cheese.
  8. Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and bubbly.
  9. Allow the casserole to cool for a few minutes before serving.
