Creamy Keto Potato Salad[edit | edit source]
Creamy Keto Potato Salad is a delicious, low-carb alternative to traditional potato salad. It's made with cauliflower instead of potatoes, but you'd never know the difference!
Ingredients[edit | edit source]
- 1 large head of cauliflower
- 1/2 cup of mayonnaise
- 1/4 cup of Dijon mustard
- 1/2 cup of diced celery
- 1/4 cup of chopped red onion
- 2 hard-boiled eggs, chopped
- 1/4 cup of chopped dill pickle
- Salt and pepper to taste
- 1/4 cup of chopped fresh parsley for garnish
Instructions[edit | edit source]
- Cut the cauliflower into bite-sized pieces and steam until tender, about 10 minutes. Allow to cool.
- In a large bowl, combine the mayonnaise, Dijon mustard, celery, red onion, hard-boiled eggs, and dill pickle. Mix well.
- Add the cooled cauliflower to the bowl and toss to coat in the dressing. Season with salt and pepper.
- Refrigerate for at least 2 hours before serving to allow the flavors to meld together.
- Garnish with fresh parsley before serving.
