Crisp Meringue Cookies are a delicious, light, and airy dessert that are perfect for those following a keto diet. They are made with simple ingredients and are sugar-free, making them a guilt-free treat.

  1. Preheat your oven to 225 degrees F (105 degrees C) and line a baking sheet with parchment paper.
  2. In a large bowl, beat the egg whites until they become foamy. This should take about 1 minute.
  3. Add the cream of tartar and continue to beat until soft peaks form.
  4. Gradually add the erythritol or other sweetener while continuing to beat the egg whites. The mixture should become glossy and form stiff peaks.
  5. Beat in the vanilla extract.
  6. Using a spoon or a cookie scoop, drop the meringue onto the prepared baking sheet. You should have about 24 cookies.
  7. Bake for 1 hour and 30 minutes, or until the meringues are crisp and dry. Turn off the oven and let the meringues cool inside for 1 hour.
  8. Remove the meringues from the oven and let them cool completely on the baking sheet.
