A delicious and healthy keto friendly recipe, the Crispy Pork Salad is a perfect blend of crispy pork, fresh vegetables, and a tangy dressing.

  1. Preheat your oven to 200°C (392°F).
  2. Score the skin of the pork belly and rub it with olive oil, salt, and pepper.
  3. Place the pork belly on a baking tray and roast for 30 minutes or until the skin is crispy.
  4. While the pork is roasting, prepare the salad by combining the salad greens, avocado, red onion, cherry tomatoes, and cucumber in a large bowl.
  5. To make the dressing, whisk together the apple cider vinegar, Dijon mustard, and olive oil in a small bowl. Season with salt and pepper.
  6. Once the pork is done, let it rest for a few minutes before slicing it into thin strips.
  7. Add the pork to the salad and drizzle with the dressing. Toss well to combine.
