Easy Creamy Cauliflower Mashed Potatoes[edit | edit source]
This is a simple and delicious keto friendly recipe for creamy cauliflower mashed potatoes. It's a great low-carb alternative to traditional mashed potatoes.
Ingredients[edit | edit source]
- 1 large head of cauliflower, cut into florets
- 3 cloves of garlic, minced
- 2 tablespoons of butter
- 1/4 cup of heavy cream
- Salt and pepper to taste
- Chopped parsley for garnish (optional)
Instructions[edit | edit source]
- Steam the cauliflower florets until they are very tender, about 10-15 minutes.
- While the cauliflower is steaming, melt the butter in a small saucepan over medium heat. Add the minced garlic and sauté until it is fragrant, about 1 minute.
- Once the cauliflower is tender, transfer it to a food processor. Add the garlic butter, heavy cream, salt, and pepper.
- Process the mixture until it is smooth and creamy, like mashed potatoes. You may need to scrape down the sides of the food processor a few times to make sure everything is well combined.
- Taste the cauliflower mashed potatoes and adjust the seasoning if necessary. Transfer the mixture to a serving dish and garnish with chopped parsley, if desired.
