Easy Creamy Cauliflower Mashed Potatoes[edit | edit source]

This is a simple and delicious keto friendly recipe for creamy cauliflower mashed potatoes. It's a great low-carb alternative to traditional mashed potatoes.

  1. Steam the cauliflower florets until they are very tender, about 10-15 minutes.
  2. While the cauliflower is steaming, melt the butter in a small saucepan over medium heat. Add the minced garlic and sauté until it is fragrant, about 1 minute.
  3. Once the cauliflower is tender, transfer it to a food processor. Add the garlic butter, heavy cream, salt, and pepper.
  4. Process the mixture until it is smooth and creamy, like mashed potatoes. You may need to scrape down the sides of the food processor a few times to make sure everything is well combined.
  5. Taste the cauliflower mashed potatoes and adjust the seasoning if necessary. Transfer the mixture to a serving dish and garnish with chopped parsley, if desired.
