Easy Keto Strawberry Shortcakes is a delicious, low-carb dessert that is perfect for those following a keto diet. This recipe is simple to make and is sure to satisfy your sweet tooth.

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the almond flour, coconut flour, erythritol, and baking powder.
  3. In a separate bowl, whisk together the melted butter, eggs, and vanilla extract.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until well combined.
  5. Pour the batter into a lined muffin tin, filling each cup about 2/3 full.
  6. Bake for 15-20 minutes, or until a toothpick inserted into the center of a shortcake comes out clean.
  7. While the shortcakes are cooling, whip the heavy cream until soft peaks form.
  8. Once the shortcakes are cool, slice them in half horizontally. Spoon a dollop of whipped cream onto the bottom half of each shortcake, then top with sliced strawberries. Place the top half of the shortcake on top, then add another dollop of whipped cream and a few more strawberry slices.
  9. Serve immediately and enjoy!
