Keto Asparagus Egg and Bacon Salad[edit | edit source]

This is a recipe for a delicious and healthy Keto Asparagus Egg and Bacon Salad. It's a perfect dish for those following a keto diet.

  1. Start by boiling the eggs. Place them in a pot of cold water, bring to a boil, then reduce heat and let simmer for 9 minutes. After that, place them in cold water to cool down.
  2. While the eggs are boiling, cook the bacon until crispy. Once done, set aside on a paper towel to drain the excess fat.
  3. Trim the ends of the asparagus and blanch them in boiling water for 2 minutes. Then, immediately transfer them to a bowl of ice water to stop the cooking process.
  4. In a small bowl, mix together the olive oil, apple cider vinegar, Dijon mustard, salt, and pepper to make the dressing.
  5. Once the eggs are cooled, peel and quarter them.
  6. In a large bowl, combine the asparagus, eggs, and bacon. Drizzle the dressing over the top and gently toss to combine.
