Keto carrot cake
Keto Carrot Cake[edit | edit source]
This is a delicious and healthy recipe for a Keto carrot cake. It's perfect for those who are on a Ketogenic diet and want to enjoy a sweet treat without breaking their diet.
Ingredients[edit | edit source]
- 2 cups of Almond flour
- 1/2 cup of Coconut flour
- 1/2 cup of Erythritol
- 1 tsp of Baking powder
- 1/2 tsp of Salt
- 1 tsp of Cinnamon
- 1/2 tsp of Nutmeg
- 4 Eggs
- 1/2 cup of Coconut oil
- 1 tsp of Vanilla extract
- 1 cup of grated Carrots
- 1/2 cup of chopped Walnuts
Instructions[edit | edit source]
- Preheat your oven to 350°F (175°C) and grease a cake pan.
- In a large bowl, combine the almond flour, coconut flour, erythritol, baking powder, salt, cinnamon, and nutmeg.
- In another bowl, whisk together the eggs, coconut oil, and vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the grated carrots and chopped walnuts.
- Pour the batter into the prepared cake pan and smooth the top with a spatula.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
