Keto Cauliflower Pizza Casserole is a delicious and healthy alternative to traditional pizza. It's low in carbs, high in fiber, and packed with nutrients. This recipe is perfect for those following a keto diet or anyone looking for a healthier pizza option.

  1. Preheat your oven to 400 degrees F (200 degrees C).
  2. Place the cauliflower florets in a food processor and pulse until it resembles rice.
  3. Transfer the cauliflower rice to a microwave-safe bowl and microwave for 5 minutes. Let it cool.
  4. Once cooled, squeeze out as much water as you can from the cauliflower using a clean kitchen towel.
  5. In a large bowl, combine the cauliflower, half of the mozzarella cheese, parmesan cheese, egg, Italian seasoning, garlic powder, salt, and pepper. Mix well.
  6. Press the mixture into the bottom of a greased baking dish.
  7. Bake in the preheated oven for 20 minutes, or until golden brown.
  8. Remove from the oven and spread the pizza sauce over the crust. Top with the remaining mozzarella cheese and pepperoni slices.
  9. Return to the oven and bake for another 10 minutes, or until the cheese is melted and bubbly.
  10. Let it cool for a few minutes before slicing and serving.
