Keto Chocolate Coconut Macaroon Cookies are a delicious, low-carb treat that are perfect for those following a keto diet. They are easy to make and are packed with healthy fats and protein.
Ingredients[edit | edit source]
- 2 cups of unsweetened shredded coconut
- 1/2 cup of almond flour
- 1/4 cup of cocoa powder
- 1/2 cup of erythritol
- 1/2 cup of coconut oil
- 4 egg whites
- 1/2 teaspoon of vanilla extract
- 1/4 teaspoon of salt
- 1/2 cup of sugar-free chocolate chips
Instructions[edit | edit source]
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the shredded coconut, almond flour, cocoa powder, and erythritol.
- Melt the coconut oil and add it to the mixture. Stir until well combined.
- In a separate bowl, beat the egg whites until stiff peaks form. Add the vanilla extract and salt, and continue to beat until well combined.
- Fold the egg whites into the coconut mixture until well combined.
- Using a cookie scoop, drop the dough onto the prepared baking sheet.
- Bake for 12-15 minutes, or until the edges are golden brown.
- Melt the sugar-free chocolate chips and drizzle over the cooled cookies.
