  1. Heat the olive oil in a large skillet over medium heat. Add the oxtails and cook until browned on all sides. Remove the oxtails from the skillet and set aside.
  2. In the same skillet, add the onion and garlic and cook until softened.
  3. In a slow cooker, combine the beef broth, red wine, tomato paste, salt, and black pepper. Stir until well combined.
  4. Add the browned oxtails, onion, garlic, thyme, and rosemary to the slow cooker. Cover and cook on low for 8 hours or until the oxtails are tender.
  5. Once cooked, remove the oxtails from the slow cooker and serve hot.
