A delicious and healthy recipe for those following a keto diet, these Low Carb Corned Beef Cabbage Rolls are a perfect choice. They are easy to prepare and packed with flavor.
Ingredients[edit | edit source]
- 1 head of cabbage
- 1 can of corned beef
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1/2 cup of beef broth
- Salt and pepper to taste
Instructions[edit | edit source]
- Preheat your oven to 350 degrees F (175 degrees C).
- Remove the core from the cabbage and carefully peel off the leaves. You'll need about 8 large leaves.
- In a large pan, sauté the onion and garlic until they are soft.
- Add the corned beef to the pan and break it up with a spoon. Cook until it is heated through.
- Lay out a cabbage leaf and place a spoonful of the corned beef mixture in the center. Roll up the leaf, tucking in the sides as you go. Repeat with the remaining leaves and filling.
- Place the cabbage rolls in a baking dish and pour the beef broth over the top.
- Cover the dish with foil and bake for 45 minutes, or until the cabbage is tender.
- Season with salt and pepper to taste before serving.
