  2. In a large bowl, combine the peanut butter, erythritol, and vanilla extract. Mix until well combined.
  3. In a separate bowl, beat the egg whites, cream of tartar, and salt until stiff peaks form.
  4. Gently fold the egg white mixture into the peanut butter mixture until well combined.
  5. Drop spoonfuls of the mixture onto the prepared baking sheet.
  6. Bake for 15-20 minutes, or until the cookies are golden brown.
  7. Allow the cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
