The creation of Egg Coffee is attributed to Mr. Nguyen Van Giang, who was a bartender at the Sofitel Legend Metropole Hotel in Hanoi in the 1940s. During the First Indochina War, there was a shortage of milk in the country. To compensate for the lack of milk, Giang decided to use egg yolks to create a creamy, rich coffee drink. The result was a unique beverage that has become a staple in Vietnamese coffee culture.

The preparation of Egg Coffee involves whisking egg yolks with sugar and condensed milk into a fluffy, creamy mixture. This mixture is then poured over a small cup of robusta coffee. The coffee is brewed in a traditional Vietnamese phin filter, which is a small metal drip filter. The egg mixture floats on top of the coffee, creating a distinct layer.
