Jura Distillery is a whisky distillery located on the Isle of Jura in the Inner Hebrides of Scotland. The distillery is known for producing a range of single malt Scotch whiskies.

History[edit | edit source]

The Jura Distillery was originally established in 1810 by the Laird of Jura, Archibald Campbell. However, the distillery fell into disrepair and was eventually dismantled. In 1963, two local estate owners, Robin Fletcher and Tony Riley-Smith, rebuilt the distillery to revive the island's whisky production. The new distillery was designed by William Delmé-Evans, a renowned distillery architect.

Production[edit | edit source]

Jura Distillery uses water from the Bhaille Mharghaidh spring, which is located near the distillery. The distillery operates with a combination of traditional and modern techniques to produce its whisky. The production process includes malting, mashing, fermentation, distillation, and maturation.

Malting[edit | edit source]

The barley used in Jura's whisky is sourced from various suppliers. The malting process involves soaking the barley in water to allow it to germinate, then drying it in a kiln.

Mashing[edit | edit source]

The malted barley is ground into a coarse flour called grist. The grist is then mixed with hot water in a large vessel called a mash tun to extract the fermentable sugars.

Fermentation[edit | edit source]

The sugary liquid, known as wort, is transferred to large fermentation vessels called washbacks. Yeast is added to the wort to convert the sugars into alcohol, producing a liquid known as wash.

Distillation[edit | edit source]

The wash is distilled twice in copper pot stills. The first distillation takes place in the wash still, and the second distillation occurs in the spirit still. The resulting spirit is then collected and stored in oak casks for maturation.

Maturation[edit | edit source]

The spirit is aged in oak casks for a minimum of three years, although many of Jura's whiskies are aged for much longer. The casks are stored in the distillery's warehouses, where the whisky develops its unique flavors and characteristics.
