- 4 chicken breasts
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon ginger, grated
- 1 clove garlic, minced
- 1 lime, juiced
- 1 tablespoon erythritol (or other keto-friendly sweetener)
- 1 small cabbage, shredded
- 1 carrot, shredded
- 1/4 cup peanut butter
- 1/4 cup apple cider vinegar
- 1/4 cup olive oil
- Salt and pepper to taste
Instructions[edit]
- Marinate the chicken breasts in a mixture of soy sauce, sesame oil, ginger, garlic, lime juice, and erythritol. Let it sit for at least 30 minutes.
- While the chicken is marinating, prepare the coleslaw by combining the shredded cabbage and carrot in a large bowl.
