This is a delicious and nutritious recipe for a Keto Bacon Mushroom Breakfast Casserole. It's a perfect dish for those following a keto diet as it's low in carbs and high in fats.
Ingredients[edit]
- 8 slices of bacon
- 1 cup of mushrooms, sliced
- 1/2 cup of onions, chopped
- 1 cup of spinach
- 6 eggs
- 1/2 cup of heavy cream
- 1 cup of shredded cheddar cheese
- Salt and pepper to taste
Instructions[edit]
- Preheat your oven to 350°F (175°C).
- Cook the bacon in a skillet over medium heat until crispy. Remove from the skillet and set aside.
- In the same skillet, sauté the mushrooms and onions until they are soft.
- Add the spinach to the skillet and cook until wilted.
- In a large bowl, whisk together the eggs, heavy cream, salt, and pepper.
- Crumble the cooked bacon and add it to the egg mixture along with the sautéed vegetables and shredded cheese.
- Pour the mixture into a greased casserole dish.
- Bake for 30-35 minutes or until the eggs are set and the top is golden brown.
