Keto Bacon Wrapped Tenderloin with Roasted Garlic Mash[edit]
Ingredients[edit]
- Bacon - 8 slices
- Pork Tenderloin - 1 (about 1.5 lbs)
- Garlic - 1 head
- Cauliflower - 1 head
- Olive Oil - 2 tablespoons
- Butter - 2 tablespoons
- Salt and Pepper - to taste
- Parsley - for garnish
Instructions[edit]
- Preheat your oven to 400 degrees F (200 degrees C).
- Wrap the pork tenderloin with the bacon slices, securing with toothpicks if necessary.
- Place the wrapped tenderloin on a baking sheet and roast in the preheated oven for about 25-30 minutes, or until the internal temperature reaches 145 degrees F (63 degrees C).
- While the tenderloin is roasting, cut the top off the head of garlic to expose the cloves. Drizzle with 1 tablespoon of olive oil, wrap in foil, and roast in the oven alongside the tenderloin for about 30 minutes.
- Cut the cauliflower into florets and steam until tender, about 10 minutes.
- Once the garlic is roasted and cool enough to handle, squeeze the cloves out of their skins and mash with a fork.
- In a large bowl, combine the steamed cauliflower, mashed garlic, butter, remaining olive oil, and salt and pepper to taste. Mash until smooth.
- Serve the bacon wrapped tenderloin sliced, with the roasted garlic mash on the side. Garnish with parsley if desired.
