Low Carb Moussaka[edit]
Low Carb Moussaka is a delicious and healthy alternative to traditional moussaka. This recipe is perfect for those following a keto diet as it is low in carbs and high in protein and healthy fats.
Ingredients[edit]
- 1 large eggplant, sliced into 1/4 inch rounds
- 1 lb ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1/2 cup red wine
- 1 tsp cinnamon
- 1/2 tsp allspice
- Salt and pepper to taste
- 2 cups heavy cream
- 4 eggs
- 1 cup grated cheese
Instructions[edit]
- Preheat your oven to 375°F (190°C).
- Arrange the eggplant slices on a baking sheet and bake for 15 minutes, or until lightly browned.
- While the eggplant is baking, cook the ground beef, onion, and garlic in a large skillet over medium heat until the beef is browned and the onion is tender.
- Add the diced tomatoes, red wine, cinnamon, allspice, salt, and pepper to the skillet. Simmer for 15 minutes.
- In a separate bowl, whisk together the heavy cream and eggs until well combined.
- Arrange half of the eggplant slices in the bottom of a baking dish. Top with half of the meat mixture, then repeat with the remaining eggplant and meat.
- Pour the cream and egg mixture over the top, then sprinkle with the grated cheese.
- Bake for 30 minutes, or until the top is golden and bubbly.
