Nokdujeon

Nokdujeon (also known as mung bean pancake) is a type of jeon, a Korean style pancake, made primarily from mung beans. It is a popular dish in Korean cuisine and is often served as a side dish or appetizer.

The main ingredient of Nokdujeon is mung beans, which are soaked, dehulled, and ground into a fine batter. Other ingredients often include Kimchi, green onions, and sometimes seafood or meat. The batter is then pan-fried until golden brown, resulting in a crispy exterior and a soft interior.

There are several variations of Nokdujeon, including Bindaetteok and Nokdu bindaetteok. Bindaetteok, also known as mung bean pancake, is a larger and thicker version of Nokdujeon, while Nokdu bindaetteok is a variation that includes ground pork and kimchi.

Nokdujeon is often enjoyed during the Korean New Year and other traditional Korean holidays. It is also a popular street food in Korea, and can be found at many food stalls and markets.
